Ingredients:
1 pound potatoes
1 egg, beaten
1/4 cup Parmesan cheese, grated
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup all-purpose flour, plus more for dusting
2 tablespoons butter
1/4 cup chopped parsley
Directions:
- Preheat oven to 400 degrees F (200 degrees C).
- Prick potatoes several times with a fork and bake for 45 minutes to 1 hour, or until very tender when pierced with a knife.
- Scoop out the flesh of the potatoes into a bowl and mash well.
- Stir in egg, Parmesan cheese, salt, and pepper until well blended.
- Stir in 1 cup of flour until the mixture forms a soft dough. If the dough is too sticky, add more flour a little bit at a time until it is no longer sticky.
- Dust a clean work surface with flour and turn the dough out onto the surface. Knead for 1 to 2 minutes to form a smooth dough.
- Cut the dough into 8 pieces and roll each one into a long rope about 1/2 inch in diameter. Cut each rope into 1-inch pieces to form the gnocchi dumplings.
- Bring a large pot of salted water to a boil over high heat then reduce the heat to medium-low and simmer for about 2 minutes. Butter will melt and foam on top of the water; watch carefully so that it does not boil over. Add gnocchi dumplings and cook for 3 to 5 minutes until they rise to the surface; remove with a slotted spoon as they are done cooking and transfer them to a serving platter lined with paper towels to drain excess water.
- Sprinkle with chopped parsley and serve immediately with your favorite sauce.
Conclusion
That’s it! This is my favorite gnocchi recipe. It’s so simple, but it’s so delicious. I hope you enjoy it as much as I do.
